Savory Italian Breakfast Oats

I am a big fan of savory breakfast food! Most recipes for Breakfast Oats will have Maple Syrup, fruit, and Brown Sugar….but I will choose Rosemary, garlic, and cheese every time. This Perfectly Imperfect dish can be made with a variety of ingredients to keep the flavors new and fresh, and adding a drizzle of hot sauce or chili oil can turn up the heat and really get you ready for the day!!


PREP TIME: < 5 minutes

COOK TIME: 10 minutes

SERVINGS: 2

ingredients

  • 1 TSP Avocado or Olive Oil
  • 1/2 Onion (finely chopped)
  • 2 Garlic Cloves (minced)
  • 1 cup Rolled Oats (I used quick 1 minute Oats)
  • 2 cups Water
  • 1 TBSP Fresh or 1 1/2 TSP dried Rosemary (chopped)*
  • 1/4 cup grated Pecorino or Parmesan Cheese**
  • 1-2 cups Spinach***
  • Salt and Pepper to taste

Serving Suggestions

  • 4 Fried, Poached, or Soft-Boiled Eggs
  • finely chopped Cured Black Olives
  • Sliced Sun-dried Tomatoes
  • Chili Flakes
  • Chili Oil
  • Hot Sauce
  • Extra Virgin Olive Oil

*Fresh or Dried Thyme can be used instead of Rosemary.

**You can substitute a good Aged Cheddar or even Feta Cheese for a sharper flavor.

**Kale or any leafy greens can be used instead of Spinach.

instructions

  1. Heat Oil in a pan over medium heat. Add Onions and saute for about 3 minutes. Add in Garlic and cook another minute.
  2. Add Oats and stir to combine. Pour in Water and stir. Increase the heat to medium-high and bring to a boil. Decrease the heat to low and simmer for about 3 minutes. (The longer it simmers the thicker it will become, so cook them to the thickness of your liking.)
  3. Stir in the Grated Cheese and Rosemary. Season with Salt and Pepper to taste.
  4. Add the Spinach and stir until wilted. Drizzle with EVOO.
  5. Separate into 2 bowls and top with Eggs and Chili Flakes. ENJOY!!
