Aldi’s Fettuccine Frutti di Mare (Seafood Pasta)

For a fraction of the cost of buying the ingredients at another grocery store, this Perfectly Imperfect recipe was made with only things I purchased from Aldi. It is absolutely delicious, requires less than 5 minutes to prepare, and can be on the table in 30 minutes. This dish is 100% restaurant quality food at home and will have your family licking their plates! 


PREP TIME: 5 minutes

COOK TIME: 25 minutes

SERVINGS: 4-6

ingredients

  • Pasta of your choice (I used Fettuccine)
  • 2 TBSP Olive Oil
  • 1 small Onion (diced)
  • 2-3 Anchovies (optional)*
  • 1 TSP Chili Pepper Flakes
  • 4 Garlic Cloves (very thinly sliced)
  • 1/4 cup Sherry (I had some on hand)**
  • 1 container of Cherry or Grape Tomatoes
  • 1 1/2 jars Rosso Pesto Sauce
  • 2 bags Mixed Seafood
  • Parsley
  • juice and zest of 1 Lemon
  • Salt and Pepper to taste

*Anchovies aren’t typically available at Aldi so unless you have them on hand they can be omitted. Make sure to generously season with Salt if not using them.

**If your Aldi doesn’t sell wine, you can use Chicken or Vegetable Stock instead, or even 1-2 TBSP of Sherry or Red Wine Vinegar. Instead of Sherry, a 1/4 cup of Red or White Wine can be substituted as well.

instructions

  1. Bring a large pot of Water to boil. Cook the Pasta 1-2 minutes under the package instructions and drain (reserving 1 cup of the Pasta Water.)
  2. Heat Oil in a large pan over low heat. Add Onions, Garlic, Anchovies, and Pepper Flakes. Saute for about 5-6 minutes.
  3. Increase the heat to medium-high and deglaze the pan with Sherry. Reduce the liquid for 2 minutes. Then add in the Tomatoes and saute another 2-3 minutes. Stir in the Pesto Sauce and simmer for about 2 minutes. Taste and season if necessary.
  4. Add all the Seafood into the pan and continue to simmer 3-4 minutes (or until the Seafood is heated through.) Stir in the Pasta and some of the Pasta Water to bring it all together.
  5. Season with Salt and Pepper and garnish with Parsley and Lemon. ENJOY!!
